Ingredients

Scale

Vegetables and Legumes

  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • 1 cup onion (diced)
  • 1 1/2 cups black beans (or 1 can drained)
  • 1 1/2 cups corn (or 1 can drained)
  • 1 1/2 cups spinach (packed, approximately 23 oz)

Spices and Seasoning

  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper

Dairy & Others

  • 1 1/41 1/2 cups finely shredded cheese (cheddar, or pepper jack, monterey jack, or a mixture of any)
  • 2 large flour tortillas

Instructions

  1. Sauté Aromatics: Heat olive oil in a sauté pan over medium heat. Add the minced garlic and diced onion, cooking for 1-2 minutes until fragrant and slightly softened.
  2. Add Spinach: Chop the spinach quickly and add it to the pan. Sauté together for another 1-2 minutes until the spinach wilts.
  3. Add Beans and Corn: Stir in the black beans and corn, cooking for an additional 5-6 minutes to heat through and combine flavors.
  4. Season and Melt Cheese: Reduce heat to medium-low. Sprinkle in paprika, cumin, kosher salt, and black pepper. Mix well. Top the mixture with shredded cheese and stir gently until the cheese melts and everything is well incorporated.
  5. Prepare Tortillas: Place the flour tortillas on a plate. Dampen a paper towel and cover each tortilla with it. Microwave for 20 seconds to soften and steam the tortillas for easier wrapping.
  6. Assemble Burritos: Lay one tortilla on a plate or cutting board. Add two to three large scoops of the black bean and spinach filling to the center of the tortilla.
  7. Wrap Burritos: Fold in each side of the tortilla over the filling toward the center. Then fold the bottom edge up over the filling, tucking it under securely. Keep the sides folded and gently roll the burrito tightly to finish wrapping, ensuring it holds together well.
  8. Serve: Serve your burritos hot, accompanied by your favorite condiments such as hot sauce, lime juice, or salsa verde for added flavor.

Notes

  • Use canned beans and corn drained for convenience or cook your own from dry for a fresher flavor.
  • Adjust cheese type and quantity to your preference for different flavor profiles.
  • For a gluten-free option, substitute flour tortillas with corn tortillas.
  • Microwaving tortillas covered with a damp paper towel helps make them pliable and prevents cracking when wrapping.
  • Add extra toppings like avocado, sour cream, or fresh cilantro to customize your burritos.
