Ingredients
Scale
Cake:
1 (15.25 oz) box yellow cake mix
1 cup pecans, chopped
Liquid Mixture:
1 (12 oz) can evaporated milk
1 cup light brown sugar, packed
1/2 cup unsalted butter, melted
1 teaspoon vanilla extract
1/2 teaspoon salt
1/2 cup sweetened shredded coconut (optional)
Whipped cream or vanilla ice cream (for serving)
Instructions
Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease a 9×13 inch baking dish with cooking spray or butter to prevent sticking.
Mix Dry Ingredients: In a large mixing bowl, combine the yellow cake mix and chopped pecans. Set aside.
Prepare Liquid Mixture: In a separate bowl, whisk together the evaporated milk, brown sugar, melted butter, vanilla extract, and salt until well combined.
Layer the Ingredients: Pour the dry cake mix and pecans mixture evenly into the greased baking dish. Next, pour the liquid mixture over the top, but do not stir. The layers will naturally combine as it bakes.
Add Coconut (Optional): If you’re using shredded coconut, sprinkle it evenly over the top of the liquid mixture.
Bake the Cake: Place the baking dish in the preheated oven and bake for 50-55 minutes, or until the top is golden brown and the edges are bubbly.
Cool and Serve: Remove the cake from the oven and let it cool for at least 10 minutes before serving. It can be enjoyed warm or at room temperature, preferably topped with a dollop of whipped cream or a scoop of vanilla ice cream.
Notes
