Ingredients

Scale

Meat Layer

  • 1 lb ground beef or turkey
  • 1 tbsp olive oil
  • Salt, to taste
  • Pepper, to taste

Cream Cheese Mixture

  • 4 oz cream cheese
  • 2 large eggs
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • Salt, to taste
  • Pepper, to taste

Other Ingredients

  • 3 medium zucchinis, sliced thinly
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the lasagna.
  2. Sauté Meat: Drizzle olive oil into a skillet and cook the ground beef or turkey over medium heat until browned and cooked through. Season with salt and pepper to taste, then set aside.
  3. Prepare Cream Cheese Mixture: In a blender or mixing bowl, combine cream cheese, eggs, Italian seasoning, garlic powder, salt, and pepper. Blend or whisk until smooth and well combined.
  4. Layer Ingredients: In a baking dish, start by laying down a layer of thinly sliced zucchini. Over this, spread half of the cooked meat mixture, then layer with half of the cream cheese mixture. Repeat the layering with the remaining zucchini, meat, and cream cheese mixture. Finish by sprinkling shredded mozzarella and grated Parmesan evenly on top.
  5. Bake: Place the assembled lasagna in the preheated oven and bake for 25 to 30 minutes, or until the cheese topping is bubbling and golden brown.
  6. Cool and Serve: Allow the lasagna to cool for a few minutes after baking to set properly. Then slice into squares and serve warm.

Notes

  • Using thinly sliced zucchini helps mimic traditional lasagna noodles while keeping the dish low-carb and keto-friendly.
  • You can swap ground beef for ground turkey or chicken for a lighter option.
  • To prevent zucchini slices from releasing excess moisture, you may pat them dry with a paper towel before layering.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
