Instructions

  1. Preheat and Prepare Pans: Preheat your oven to 350°F (175°C). Grease your loaf pans thoroughly to prevent sticking and set them aside.
  2. Mix Dry Ingredients: In a medium mixing bowl, whisk together the 2 cups of sugar, all-purpose flour, baking powder, salt, and 1 tablespoon of cinnamon until well combined. Set this mixture aside.
  3. Combine Wet Ingredients: Using a stand mixer fitted with a beater attachment or a large mixing bowl and hand mixer, beat together the eggs, milk, and vegetable oil until just combined, ensuring not to overmix.
  4. Incorporate Dry into Wet: Gradually add the dry mixture to the wet ingredients, mixing until the batter is just moist. Avoid overmixing to maintain a tender bread texture. Then gently fold in the diced and peeled apples along with the cinnamon to evenly distribute them throughout the batter.
  5. Fill Loaf Pans: Pour the batter into the prepared loaf pans, filling each to about two-thirds full to allow room for the bread to rise.
  6. Add Toppings: In a small bowl or measuring cup, mix the remaining ⅔ cup sugar with 1 teaspoon cinnamon. Sprinkle this cinnamon sugar mixture evenly on top of each loaf. Use a knife to gently swirl the topping into the batter on the surface for a decorative and flavorful effect.
