Ingredients

Scale

Cookie Dough

  • 1/2 cup butter (at room temperature)
  • 3/4 cup brown sugar (light or dark)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 and 1/4 cups all-purpose flour
  • 1 and 1/4 cups old-fashioned rolled oats
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1 cup peeled and finely chopped apple (1/4-inch cubes or smaller)
  • 2 teaspoons lemon juice

Maple Glaze

  • 2/3 cup powdered sugar
  • 2 teaspoons milk
  • 2 teaspoons maple syrup

Instructions

  1. Preheat Oven and Prepare Pans: Preheat the oven to 350 degrees F. Line baking sheets with parchment paper or silicone baking mats to prevent sticking and set aside.
  2. Cream Butter and Sugar: Using an electric mixer, cream together the softened butter and brown sugar on high speed until light and fluffy. Add the egg and vanilla extract, scraping down the sides of the bowl to ensure all ingredients are well combined.
  3. Mix Dry Ingredients: Sprinkle the flour, rolled oats, ground cinnamon, baking soda, ground cloves, and salt evenly over the wet mixture. Mix on low speed until the ingredients are mostly incorporated to form the cookie dough.
  4. Prepare Apples and Combine: Toss the chopped apples with the lemon juice to prevent browning, then gently fold them into the cookie dough. Scoop dough into 2-tablespoon portions, place on the baking sheets spaced apart, and gently flatten each slightly with your fingers or a spatula.
  5. Bake Cookies: Bake for 12 to 14 minutes until the cookie tops are set and edges are lightly golden. Remove from the oven and cool on the baking sheets for 5 to 10 minutes before transferring to a wire rack to cool completely.
  6. Make Maple Glaze and Decorate: In a small bowl, whisk together powdered sugar, milk, and maple syrup until smooth. Adjust thickness with additional syrup or powdered sugar as needed. Drizzle the glaze over the cooled cookies using a spoon. Allow the glaze to set before serving, keeping the cookies separate to avoid sticking.

Notes

  • Use tart apples like Granny Smith for a nice balance of sweetness and acidity in the cookies.
  • Ensure the apples are finely chopped (1/4-inch or smaller) for even distribution and to avoid soggy spots.
  • The lemon juice tossed with the apples prevents browning and keeps the color vibrant.
  • Store cookies in an airtight container at room temperature for up to 5 days.
  • For a vegan version, substitute butter with vegan margarine and use a flax egg instead of the large egg.
