  • 4 large tart/crisp apples (Granny Smith, Pink Lady, or Honeycrisp)
  • 1 cup whole milk
  • 1 cup all-purpose flour
  • 1 tablespoon cornstarch
  • 4 tablespoons granulated sugar (divided into 1 tablespoon and 3 tablespoons)
  • 1½ teaspoons cinnamon (divided into 1 teaspoon and ½ teaspoon)

  • ¼ cup vegetable oil

Instructions

  1. Prepare and slice apples: Peel, core, and slice your apples into ½-inch to ¾-inch slices. Place the slices in a large bowl and pour over the whole milk. Toss to coat the slices evenly, then set aside to soak and soften slightly.
  2. Make the flour mixture: In a pie plate or shallow dish, combine the all-purpose flour, cornstarch, 1 tablespoon granulated sugar, and 1 teaspoon cinnamon. Mix thoroughly to ensure an even coating mixture for the apples.
  3. Mix cinnamon sugar: In a small bowl, combine the remaining 3 tablespoons granulated sugar with ½ teaspoon cinnamon. Stir well and set aside; this will be used for sprinkling on the fried apple fries for sweet flavoring.
  4. Coat the apple slices: Remove about 6 to 8 apple slices from the milk, allowing any excess milk to drip off. Dredge the slices in the flour mixture, gently tossing to coat all sides evenly. Place coated slices on a large plate or tray, and repeat with all apple slices until they are all coated.
  5. Heat oil and prepare for frying: Add ¼ cup of vegetable oil to a medium-sized skillet and heat over medium heat. Line a baking sheet or large plate with paper towels to drain the fried apple slices and keep them crisp.
  6. Fry the apple slices: Fry 6 to 8 apple slices at a time, cooking each side for 1 to 1½ minutes or until they turn lightly golden brown. Use tongs to carefully flip the slices. Transfer fried apple fries onto the paper towel-lined baking sheet to drain excess oil.
  7. Season and serve: Immediately sprinkle the fried apple fries with the prepared cinnamon-sugar mixture for a delicious sweet coating. Transfer to a serving plate and repeat the frying and seasoning process with the remaining apple slices.
  8. Maintain oil quality: Because of the volume of apple fries, after frying about half or a third of the slices, carefully drain the used oil from the skillet and replace it with a fresh ¼ cup of vegetable oil to maintain consistent frying temperature and crispiness.
