Apple Mixture
- 2 medium to large sized apples (diced into approximately 1/4″ pieces)
- 2 tsp lemon juice
- 2 tsp cornstarch
- 2 tbsp granulated sugar
- 1/4 cup packed brown sugar
- 1 tbsp cold butter (cut into small pieces, approximately 1/8″)
- 1 1/2 tsp ground cinnamon
Crumb Topping
- 1/4 cup quick cook oats (old fashioned oats can also be used)
- 1/4 cup all-purpose flour
- 1/4 cup packed brown sugar
- 1 1/2 tsp ground cinnamon
- 1/4 cup cold butter (cut into small pieces, approximately 1/8″)
- Preheat Cooking Surface: Preheat your grill to medium heat or set your oven to 450 degrees Fahrenheit to prepare for baking.
- Prepare Foil Packets: Cut four pieces of non-stick foil, each approximately 12×18 inches. These will be used to create sealed packets for the apple pie ingredients.
- Make the Apple Mixture: In a medium bowl, combine the diced apples and lemon juice. Add cornstarch, granulated sugar, brown sugar, 1 1/2 tsp cinnamon, and 1 tbsp cold butter pieces. Mix everything thoroughly until well combined. Set aside.
- Prepare the Crumb Topping: In a separate bowl, mix oats, flour, brown sugar, and 1 1/2 tsp cinnamon. Add the cold butter pieces and use a pastry cutter or two forks to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
- Assemble Packets: Place half of the apple mixture in the center of each foil piece, ensuring it touches the non-stick side. Sprinkle half of the crumb topping evenly over the apples.
- Seal Packets: Fold and seal the foil packets tightly so that all edges are securely closed to prevent leakage during cooking.
- Cook the Packets: Place the foil packets on the grill or over a campfire for about 8-12 minutes, or on a baking sheet in the oven for approximately 15 minutes. Cooking times may vary depending on heat source.
- Cool and Serve: Remove the packets from heat and let them cool for about 10 minutes. Carefully open the packets as they will be hot. Serve warm with a scoop of ice cream if desired. Enjoy!
Notes
- Old fashioned oats can be used instead of quick cook oats for a chewier texture.
- Use non-stick foil to prevent the apple mixture from sticking to the foil.
- Adjust cooking times according to your grill or oven as heat can vary.
- Serve with vanilla ice cream for an extra indulgent treat.
- These packets are great for camping as they can be cooked over a campfire.
