This Apple Zucchini Bread is a delightful combination of sweet apples and tender zucchini in a moist, flavorful loaf. Perfect for breakfast or a snack!

Dry Ingredients:

  • 3 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 3 teaspoons cinnamon
  • 1/2 teaspoon nutmeg

Wet Ingredients:

  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 4 eggs
  • 1/2 cup canola oil
  • 1 1/2 teaspoons vanilla extract

Add-ins:

  • 2 heaping cups shredded zucchini
  • 1 1/2 cups finely diced apple

Instructions

  1. Preheat Oven: Preheat oven to 350 degrees F and grease 2 standard loaf pans.
  2. Mix Wet Ingredients: In a large bowl, mix sugars, eggs, oil, and vanilla until light and airy.
  3. Combine Dry Ingredients: In a smaller bowl, sift together flour, baking soda, salt, cinnamon, and nutmeg.
  4. Combine Wet and Dry Ingredients: Slowly mix dry ingredients into the wet ingredients until just combined.
  5. Add Zucchini and Apple: Fold in zucchini and apple until evenly distributed. Do not overmix.
  6. Bake: Transfer half the batter into each loaf pan. Bake for 35 minutes, then cover with foil and continue baking for another 20-25 minutes or until an inserted toothpick comes out clean.

Notes
