Artisan Bread Recipe

5.1 from 9 reviews

This Artisan Bread Recipe produces a crusty, golden loaf with a tender crumb using simple ingredients and minimal effort. Perfect for beginners and seasoned bakers alike, this no-knead bread develops rich flavor through a long fermentation process and achieves a crisp crust by baking with steam in a hot oven.

Ingredients

Scale

Dry Ingredients

  • 3 cups (395 grams) all-purpose flour or bread flour
  • ½ tablespoon kosher salt
  • ¼ ounce instant or active dry yeast (one packet or 2 ¼ teaspoons)

Wet Ingredients

  • 1 ½ cups warm water (105°F)

Instructions

  1. Combine Ingredients: In a large bowl, mix together the flour, kosher salt, and yeast until evenly distributed.
  2. Add Warm Water and Mix: Pour the warm water over the dry ingredients and stir until combined. The dough should be sticky but manageable.
  3. First Rise: Cover the bowl with a towel or plastic wrap and allow the dough to rise at room temperature for 2 to 10 hours, or ideally overnight for maximum flavor development.
  4. Shape the Dough: Wet your hands to prevent sticking, turn the dough onto a lightly floured surface, and gently fold the edges into the center to form a round loaf. Alternatively, divide the dough into two loaves, tucking the ends underneath for shape.
  5. Rest the Dough: Place the shaped dough on a piece of parchment paper, dust its top with flour, and score 1 to 4 lines using a sharp bread knife. Let it rest for 20 to 30 minutes.
  6. Preheat Oven: Heat your oven to 450°F (230°C) with a baking stone, pizza stone, Dutch oven, or iron skillet placed inside to get very hot.
  7. Bake with Steam: Transfer the dough on parchment onto the hot surface. Immediately add 1 cup of hot water or 5 ice cubes to the bottom of the oven to generate steam, then close the oven quickly to trap moisture.
  8. Baking: Bake the bread for 25 to 30 minutes until the crust turns golden brown and is crusty to the touch.
  9. Cool the Bread: Remove the bread and cool it on a wire rack for at least 30 minutes for the crumb to set before slicing.
  10. Store Properly: To maintain the crust’s crispness, store the bread in a paper bag rather than plastic.

Notes

  • Using bread flour can result in a chewier texture, while all-purpose flour produces a softer crumb.
  • Long fermentation (overnight rise) enhances the flavor and texture of the bread.
  • Creating steam in the oven is essential for a crusty exterior.
  • Make sure water is warm but not hot to avoid killing yeast (around 105°F).
  • Let the bread cool completely before slicing for best texture.
  • Store bread in a paper bag instead of plastic to keep crust crisp.
