Ingredients

Scale

Vegetables

  • 1 bunch asparagus (about 1216 ounces), ends trimmed

Pastry and Meat

  • 2 sheets frozen puff pastry, thawed
  • 12 slices prosciutto

Cheese

  • 8 ounces Gruyere, shredded

Other

  • 1 tablespoon extra virgin olive oil
  • 1 egg, beaten
  • Kosher salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and line a sheet pan with parchment paper to prevent sticking and ensure even baking.
  2. Prepare Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry sheets to form a large rectangle about twice their original size. Trim edges to make a neat square shape and cut into six equal squares using a pizza cutter or sharp knife.
  3. Season Asparagus: Toss the trimmed asparagus spears with extra virgin olive oil, then season generously with kosher salt and freshly ground pepper to enhance their natural flavor.
  4. Assemble Bundles: Place a slice of prosciutto folded in half neatly on each puff pastry square. Arrange 3 to 4 asparagus stalks over the prosciutto, then sprinkle 1 to 2 tablespoons of shredded Gruyere cheese on top, depending on the size of the asparagus and your preference.
  5. Wrap and Seal: Lift two opposite corners of each puff pastry square and gently wrap them around the asparagus and fillings, pressing the pastry edges together to seal completely. Brush the top of each bundle with the beaten egg to promote golden browning. Optionally, sprinkle a little more salt and pepper on top.
  6. Bake: Place the bundles on the prepared sheet pan and bake in the preheated oven for 12 to 15 minutes, until the puff pastry is golden brown, puffed, and crisp.
  7. Serve: Remove from the oven and serve immediately while warm for the best flavor and texture. These bundles make great appetizers or a delightful side dish.

Notes

  • You can substitute Gruyere cheese with Swiss or mozzarella for a milder flavor.
  • Make sure the puff pastry is well chilled before rolling to prevent sticking.
  • Cut the asparagus to similar thickness for even cooking in the bundles.
  • These bundles are best served fresh to keep the pastry crisp.
  • To save time, you can prepare the bundles ahead of time and refrigerate before baking.
