Blackberry Coulis:
- 200 g/ 7oz blackberries (fresh or frozen)
- 3 tbsp icing (confectionary) sugar
- 1 tbsp water (if using fresh blackberries)
- 1/2 tsp vanilla extract
Hot Chocolate:
- 720 ml/ 3 cups whole milk (or non-dairy equivalent)
- 120 g/ 4 1/4oz dark chocolate
- Whipped cream
- Mini marshmallows
- Extra blackberries
- Prepare Blackberry Coulis: If using frozen blackberries, allow to defrost in a small saucepan for 30 minutes. Add icing sugar and cook on moderate heat for 5 minutes until soft.
- If using Fresh Blackberries: Cook with icing sugar and water.
- Strain Blackberries: Push cooked blackberries through a sieve to create a coulis. Discard seeds.
- Heat Milk: Scald milk in a pot.
- Blend Chocolate: Blend chopped chocolate and vanilla extract with hot milk.
- Add Coulis: Reserve some coulis, then add the rest to the blender.
- Blend: Blend until chocolate melts and drink is frothy.
- Sweeten and Reheat: Sweeten to taste and reheat if needed.
- Serve: Pour into mugs, top with cream, marshmallows, reserved coulis, and a blackberry. Serve hot.
