Crust

  • 2 cups crushed graham crackers (about 14 large graham crackers)
  • 1/3 cup granulated sugar
  • 10 tablespoons butter, melted

Filling

  • 1 8 oz package cream cheese, softened
  • 1 cup confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 1 16 oz tub Cool Whip, thawed and divided

Topping

  • 2 21 oz cans blueberry pie filling
  • Additional graham cracker crumbs for garnish (optional)

Instructions

  1. Prepare the crust: In a medium bowl, combine the crushed graham crackers, granulated sugar, and melted butter. Stir until the mixture is evenly moistened. Press the crust mixture firmly and evenly into the bottom of a 9 x 13-inch pan. Place the pan in the refrigerator for 30 minutes to chill and set.
  2. Make the cream cheese layer: Using a stand mixer or hand mixer, beat together the softened cream cheese, confectioners’ sugar, vanilla extract, and half of the Cool Whip (about 8 oz) until smooth and creamy. Spread this mixture evenly over the chilled graham cracker crust.
  3. Add the blueberry layer: Spoon the blueberry pie filling evenly over the cream cheese layer. Spread gently to cover the entire surface without mixing layers.
  4. Top with whipped topping: Spread the remaining Cool Whip over the blueberry layer evenly. For an optional garnish, sprinkle additional graham cracker crumbs on top.
  5. Chill before serving: Refrigerate the assembled dessert for at least 2 hours to allow it to set properly and develop flavors. Slice and serve chilled for best taste and texture.
