Roasted Peach Puree:

  • 56 Ripe Peaches
  • 2 TBSP Honey

Bourbon Caramel Sauce:

  • 1 C Granulated Sugar
  • 1/4 C Water
  • 2 TBSP Light Corn Syrup
  • 1/2 C Heavy Cream, at room temperature
  • 2 TBSP Salted Butter
  • 2 TBSP Bourbon Whiskey

Ice Cream Base:

  • 1 14 oz Can Sweetened Condensed Milk
  • 1/2 C Roasted Peach Puree
  • 2 tsp Vanilla Extract
  • 2 C Heavy Cream, cold
  • 1/2 C Bourbon Caramel
  • 1/2 C Candied Pecans *optional

Instructions

  1. Preheat the oven: Preheat the oven to 400°F and line a quarter sheet pan with parchment.
  2. Roast the peaches: Slice the peaches, toss with honey, and roast for 12-15 minutes until soft and browned.
  3. Puree the peaches: Once cooled, puree the roasted peaches after passing through a sieve.
  4. Make the caramel: Cook sugar, water, and corn syrup until amber in color, then add cream, butter, and bourbon.
  5. Prepare the ice cream base: Mix condensed milk, vanilla, and peach puree in one bowl. Whip cold cream to stiff peaks in another bowl.
  6. Combine: Fold whipped cream into condensed milk mixture, then layer with caramel in a dish, alternating with pecans.
  7. Freeze: Freeze the ice cream for at least 6 hours or overnight.

  • You can adjust the amount of bourbon in the caramel sauce to suit your taste.
  • For a nut-free version, omit the candied pecans or substitute with a different topping.
