  • 200 grams all-purpose flour
  • 2 teaspoons baking powder
  • 200 grams caster sugar
  • 1/2 tsp salt

Wet Ingredients:

  • 250 grams unsalted butter
  • 4 eggs at room temperature
  • 4 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat Oven: Preheat the oven to 180°C. Prepare a 7″ or 8″ square baking tin by lining it with parchment paper or greasing it with butter and dusting with flour.
  2. Sift Dry Ingredients: Sift together the flour, baking powder, and salt multiple times for a fluffy texture.
  3. Cream Butter & Sugar: In a large bowl, beat the butter and sugar until pale. Add eggs one at a time, beating well after each addition.
  4. Combine Wet Ingredients: Mix in the vanilla extract until fully incorporated.
  5. Alternate Flour & Milk: Gradually add the flour and milk in parts, mixing well after each addition.
  6. Bake: Pour the batter into the prepared tin and bake for 40-45 minutes, or until a skewer inserted comes out clean.
  7. Cool & Serve: Let the cake cool in the tin for 10 minutes, then transfer to a wire rack. Invert the cake to remove from the tin and allow it to cool completely before slicing.
