  • 2 ¼ tsp active dry yeast (one packet)
  • 1 cup warm water (105–115°F / 40–46°C)
  • 2 tbsp granulated sugar
  • 2 tbsp unsalted butter (softened)
  • 1 tsp salt

Garlic Butter Topping

  • ½ cup (1 stick) unsalted butter, melted
  • 4 large garlic cloves, minced (or 2 tsp garlic powder)
  • 2 tsp Italian seasoning (a blend of dried oregano, basil, thyme, rosemary)
  • ½ tsp salt
  • Optional: ¼ cup finely grated Parmesan cheese
  • Optional: 2 tbsp fresh parsley, chopped

Instructions

  1. Proof the Yeast: In a mixing bowl, whisk together warm water and sugar. Sprinkle the yeast on top. Stir gently and let it sit for 5–10 minutes until frothy. This step ensures the dough will rise properly and results in soft, airy breadsticks.
  2. Make the Dough: Add softened butter, salt, and half of the flour to the foamy yeast mixture. Stir or mix on low speed until combined. As the dough begins to pull away from the bowl, add the remaining flour.
  3. Knead the Dough: Knead the dough for 6–8 minutes by hand on a lightly floured surface, or 4–5 minutes using a stand mixer with a dough hook, until it becomes smooth and elastic. If the dough is sticky, gradually add up to ¼ cup more flour to reach the right consistency.
  4. First Rise: Lightly oil a bowl and place the dough inside, turning it to coat all sides. Cover with a damp towel or plastic wrap. Let it rise in a warm spot (75–80°F / 24–27°C) until doubled in size, approximately 60 minutes.
  5. Shape the Breadsticks: Gently punch down the risen dough to release any air. Turn it out onto a floured surface and divide into 8 pieces for larger breadsticks or up to 12 for smaller ones. Roll each piece into a 1-inch-wide rope, about 8–10 inches long. Arrange the breadsticks on a parchment-lined sheet pan, spacing them 1 inch apart.
  6. Second Rise (Optional): Cover the shaped breadsticks and let them rest for 15 minutes to achieve fluffier, tender centers.
  7. Prepare Garlic-Butter Mixture: In a small bowl, whisk together the melted butter, minced garlic, Italian seasoning, salt, and if desired, Parmesan cheese. Set aside.
  8. Bake & Brush: Preheat the oven to 400°F (200°C). Brush each breadstick generously with the garlic-butter mixture. Bake for 12–15 minutes, until the breadsticks are golden brown on top.
  9. Finishing Touch: Remove the breadsticks from the oven and immediately brush them again with the remaining garlic-butter mixture. Sprinkle with fresh parsley if desired before serving.
