  • 1/3 cup unsalted butter
  • 1/2 red bell pepper (seeded and diced)
  • 1/2 green bell pepper (seeded and diced)
  • 1/2 yellow onion (diced)
  • 3 1/4 cups low-sodium chicken broth
  • 1 1/4 teaspoon Kosher salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground thyme
  • 1 teaspoon ground paprika
  • 1/4 teaspoon black pepper
  • 1 bay leaf
  • 1 1/2 cups long-grain white rice

Instructions

  1. Sauté Peppers and Onions: Add butter to a medium saucepan over medium-high heat. Sauté diced peppers and onion until softened.
  2. Boil Broth and Spices: Add chicken broth, salt, garlic powder, thyme, paprika, pepper, and bay leaf. Bring to a boil.
  3. Add Rice: Stir in rice, cover with a lid, and simmer.
  4. Simmer: Cook for 20-25 minutes until rice is tender. Let it rest for 10 minutes.
