Vegetables:

  • 1 zucchini (½ lb.)
  • 1 yellow squash (½ lb.)
  • 1 red bell pepper
  • 1 red onion

Sausage:

  • 14 oz. Andouille sausage
  • 2 Tbsp cooking oil, divided
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1/4 tsp salt
  • 1/4 tsp freshly cracked black pepper
  • 2 Tbsp chopped fresh parsley

Instructions

  1. Slice the Vegetables: Slice zucchini and yellow squash. Cut red bell pepper and red onion into strips. Combine all vegetables in a bowl.
  2. Cook the Sausage: Slice sausage and cook with 1 Tbsp oil until browned. Transfer to a bowl.
  3. Prepare the Vegetables: Drizzle with 1 Tbsp oil, sprinkle with spices, and toss to coat.
  4. Sauté the Vegetables: Cook the vegetables in the skillet until slightly tender.
  5. Combine: Add sausage and parsley to vegetables. Adjust seasoning.
  6. Serve or Store: Serve immediately or refrigerate for later.
