Roasted Garlic:

  • 1 large whole garlic head
  • 1 ½ tablespoons olive oil

Caramelized Onion Bisque:

  • 9 cups thinly sliced sweet onions
  • 2 ½ cups sliced leeks (light green and white parts only)
  • 1 teaspoon salt
  • 1 teaspoon dried thyme
  • 2 tablespoons all-purpose flour
  • 1/3 cup dry white wine
  • 4 cups vegetable broth
  • 2 cups milk
  • Fresh thyme leaves for garnish
  • Freshly ground black pepper for garnish

Instructions

  1. Roast the Garlic: Preheat oven to 350°F. Remove the outer skin from the garlic head, rub with olive oil, wrap in foil, and bake for 1 hour. Let cool, peel cloves.
  2. Caramelize Onions: In a pot, cook onions and leeks with oil, salt, and thyme for 1 hour until dark and golden. Add flour, wine, and broth; simmer 30 minutes.
  3. Blend: Combine roasted garlic, onion mixture in a blender until smooth. Return to pot, add milk, simmer 8 minutes.
  4. Serve: Garnish with thyme and black pepper.
