- Cook Bacon and Vegetables: Heat a large non-stick pan over high heat. Add the diced bacon, bell peppers, onion, jalapeno (if using), and 1 tablespoon of olive oil. Cook for 3-4 minutes or until the bacon is crispy and the vegetables are softened. Transfer this mixture to a bowl, wipe the pan clean, and return it to the heat.
- Prepare Scrambled Eggs: In a large bowl, whisk together the eggs, half & half, and salt until smooth. Add 1 tablespoon of olive oil or butter to the pan and heat for about 1 minute. Pour in the egg mixture and add 1/2 cup of shredded cheese. Stir frequently and cook for about 2 minutes or until eggs just start to set but remain creamy. Transfer eggs to a bowl and wipe down the pan again.
- Assemble Wraps: Lay each tortilla flat on a clean surface. Divide the scrambled eggs evenly among the tortillas. Top with some of the bacon and vegetable mixture and sprinkle with additional cheese to taste. Fold each tortilla tightly into a burrito shape.
- Toast Wraps: Heat a teaspoon of olive oil or butter in the same pan over medium heat. Place the wrapped tortillas seam side down and toast for 1-2 minutes per side or until the outside is golden and crispy. Remove from the pan and serve warm with your favorite salsa.
