Instructions

  1. Prepare the batter: In a large bowl, lightly beat the eggs. Add the grated butternut squash, all-purpose flour, Italian herb blend, salt, pepper, and shredded cheddar cheese. Stir gently until the ingredients are just combined to form a thick batter.
  2. Heat the oil: Place a large skillet over medium-high heat and add 1 tablespoon of olive oil. Allow it to heat until shimmering but not smoking.
  3. Cook the fritters: Working in batches of two or three, spoon about 1/4 cup of the batter onto the hot skillet. Use a spatula to flatten each spoonful into a round fritter shape.
  4. Fry until golden: Cook each fritter for about 3 minutes on one side over medium heat until golden brown. Carefully flip the fritters and cook the other side for another 3 minutes until equally golden and cooked through.
