Instructions

  1. Heat the skillet: Place a large skillet over medium-high heat and add the olive oil, allowing it to warm up to prepare for sautéing.
  2. Cook the chicken: Add the cubed chicken breasts to the pan and sauté for 9-10 minutes until the edges begin to brown. The chicken does not need to be fully cooked at this stage as it will continue cooking with the rice and broccoli.
  3. Add aromatics: Stir in the diced onion and minced garlic with the chicken and sauté for an additional 5 minutes to soften and release their flavors.
  4. Combine rice and seasonings: Mix in the dry rice, dried basil, dried parsley, garlic powder, onion powder, salt, black pepper, and chicken stock (preferably warmed). Stir well, cover the skillet, and cook over medium heat for 10 minutes, stirring every few minutes to prevent sticking.
  5. Cook with broccoli: After 10 minutes, add the broccoli florets to the skillet. Stir to combine, cover, and cook for another 5 minutes until the broccoli is tender and the rice is fully cooked.
  6. Finish and serve: Remove the skillet from heat and sprinkle the grated parmesan cheese evenly over the dish. Serve warm for a creamy, flavorful finish.
