Ingredients

Scale

For the Chicken Patties:

  • 1 lb ground chicken
  • ¼ cup white onion, shredded and moisture squeezed out
  • 23 tbsp frozen butter, shredded
  • 2 tsp garlic, minced
  • 1 tsp Worcestershire sauce
  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • ½ tsp lemon zest
  • ½ tsp liquid smoke (optional)
  • 2 tbsp finely shredded parmesan cheese
  • Kosher salt and ground black pepper, to season

For Assembly:

  • Hamburger buns (regular or gluten-free)
  • Romaine lettuce
  • Caesar dressing (regular or dairy-free)
  • Shaved parmesan cheese
  • Croutons
  • Red onion (optional)

Instructions

  1. Prepare Ingredients: Grate the white onion over paper towels and squeeze out excess moisture to prevent soggy patties. Grate the frozen butter using the same grater to incorporate evenly into the mixture.
  2. Mix Burger Mixture: In a large bowl, combine the ground chicken, grated onion, shredded frozen butter, minced garlic, Worcestershire sauce, mayonnaise, Dijon mustard, lemon zest, optional liquid smoke, and shredded Parmesan cheese. Mix gently until all ingredients are evenly distributed, being careful not to overwork the meat.
  3. Form Patties: Divide the mixture into 4 equal portions and shape each into patties about ½ to ¾ inch thick. Press a thumbprint indentation in the center of each patty to ensure even cooking. Season both sides generously with kosher salt and freshly ground black pepper.
  4. Chill: Place the patties on a parchment-lined baking sheet and freeze them for 20 minutes. This step helps the patties hold their shape during grilling and prevents sticking.
  5. Grill: Preheat your grill to medium-high heat and oil the grates to prevent sticking. Grill the burgers for 5 to 6 minutes per side, or until they reach an internal temperature of 160°F (71°C) for safely cooked ground chicken.
  6. Rest & Assemble: Remove the burgers from the grill and allow them to rest for 5 minutes to retain their juices. Assemble on hamburger buns with romaine lettuce, a generous spread of Caesar dressing, shaved Parmesan cheese, croutons, and optional slices of red onion for added flavor and crunch. Serve immediately and enjoy!

Notes

  • Freezing patties briefly before grilling helps them keep their shape and reduces flare-ups on the grill.
  • You can substitute frozen butter with regular room-temperature butter if needed, but frozen butter helps create juicier patties.
  • Adjust the amount of Caesar dressing and Parmesan to your taste preferences during assembly.
  • Use gluten-free buns and dairy-free Caesar dressing to make this recipe gluten-free or dairy-free respectively.
  • Make sure the internal temperature of ground chicken reaches 160°F for food safety.
