Chicken Quesadillas:

  • 1/2 cup diced red bell peppers
  • 1/2 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1 cup cooked chicken, diced
  • 1 cup grated cheese
  • 4 flour tortillas
  • Salt & pepper, to taste
  • Hot sauce, to serve
  • Sour cream, for dipping

Instructions

  1. Prepare the Filling: In a large bowl, mix together the bell peppers, red onion, cilantro, cooked chicken, and grated cheese.
  2. Cook the Quesadillas: Heat a skillet and spray with cooking spray. Divide the filling into 4 portions and spread each portion on a tortilla, folding it in half.
  3. Cook Until Golden: Cook the quesadillas until the cheese starts to melt, then flip and cook the other side until golden and crispy.
  4. Slice and Serve: Remove the quesadillas from the skillet, slice each into 3 or 4 pieces, and serve hot with hot sauce and sour cream.
  5. Enjoy: Repeat the process with the remaining tortillas and filling, then dig in and enjoy your delicious Chicken Quesadillas!
