Marinade:
- 1 lb boneless chicken thigh, cut into bite-sized pieces
- 1 teaspoon cornstarch
- 1/4 cup light soy sauce
- 1 teaspoon sesame oil
- 2 teaspoons sugar (or honey)
- 1 tablespoon rice wine vinegar (optional)
- 3 garlic cloves, smashed
Stir Fry:
- 1 tablespoon cooking oil
- 1 medium zucchini, halved lengthwise and sliced
- 1 tablespoon oyster sauce
- Ground black pepper, to taste (optional)
- Prepare Marinade: Cut chicken into bite-sized pieces. In a mixing bowl, combine chicken with cornstarch, soy sauce, sesame oil, sugar, rice wine vinegar, and smashed garlic. Allow to marinate for 30 minutes.
- Stir Fry: Heat cooking oil in a pan over medium-high heat. Add garlic and marinated chicken, stir-fry for 2 minutes until chicken is cooked. Remove chicken from pan and set aside.
- Add more oil to the pan if needed. Stir fry zucchini for about 5 minutes until tender.
- Return chicken to the pan, add oyster sauce, black pepper, and stir fry for another 2-3 minutes until chicken is fully cooked and zucchini is tender.
- Remove from heat and serve hot.
