This Chicken Zucchini Stir Fry is a quick and flavorful dish that combines tender chicken thigh pieces with crisp zucchini in a savory sauce. Perfect for a busy weeknight dinner!

Marinade:

  • 1 lb boneless chicken thigh, cut into bite-sized pieces
  • 1 teaspoon cornstarch
  • 1/4 cup light soy sauce
  • 1 teaspoon sesame oil
  • 2 teaspoons sugar (or honey)
  • 1 tablespoon rice wine vinegar (optional)
  • 3 garlic cloves, smashed

Stir Fry:

  • 1 tablespoon cooking oil
  • 1 medium zucchini, halved lengthwise and sliced
  • 1 tablespoon oyster sauce
  • Ground black pepper, to taste (optional)

Instructions

  1. Prepare Marinade: Cut chicken into bite-sized pieces. In a mixing bowl, combine chicken with cornstarch, soy sauce, sesame oil, sugar, rice wine vinegar, and smashed garlic. Allow to marinate for 30 minutes.
  2. Stir Fry: Heat cooking oil in a pan over medium-high heat. Add garlic and marinated chicken, stir-fry for 2 minutes until chicken is cooked. Remove chicken from pan and set aside.
  3. Add more oil to the pan if needed. Stir fry zucchini for about 5 minutes until tender.
  4. Return chicken to the pan, add oyster sauce, black pepper, and stir fry for another 2-3 minutes until chicken is fully cooked and zucchini is tender.
  5. Remove from heat and serve hot.
