Dry Ingredients:

  • 2 cups Bisquick Baking Mix
  • 1/2 cup granulated sugar

Wet Ingredients:

  • 2/3 cup milk
  • 2 TBSP vegetable oil
  • 1 egg
  • 1 tsp vanilla extract

Additional:

  • 3/4 cup semi-sweet chocolate chips, divided

Instructions

  1. Preheat oven and prepare pan: Preheat oven to 400F and grease the wells of a muffin pan.
  2. Mix dry ingredients: In a mixing bowl, combine Bisquick baking mix and sugar.
  3. Combine wet ingredients: In a separate liquid measuring cup or small mixing bowl, whisk together milk, oil, egg, and vanilla extract.
  4. Combine wet and dry ingredients: Add the wet ingredients to the dry ingredients, mixing until combined and fully moistened (do not overmix).
  5. Add chocolate chips: Stir in 1/2 cup of chocolate chips.
  6. Fill muffin pan: Divide batter among 12 wells of muffin pan. Sprinkle remaining 1/4 cup of chocolate chips over the tops of the muffins.
  7. Bake: Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
