For the Chocolate Coffee Madeleines
- 7 tbsp unsalted butter
- 2 eggs
- 1/2 cup castor sugar
- 2 tbsp instant coffee
- 1 tbsp hot water
- 13 tbsp cake flour
- 2 tbsp cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
For the Mascarpone Cream Filling
- 3 oz mascarpone cheese
- 1 tbsp confectioners’ sugar
- 2 tbsp heavy whipping cream
- 2 tsp Kahlua coffee liqueur

- Prepare Coffee Mixture: In a small bowl, dissolve the instant coffee in hot water and set aside.
- Mix Eggs and Sugar: In a large bowl, whisk the eggs and castor sugar for 3-4 minutes until the sugar is fully dissolved and the mixture is slightly frothy.
- Incorporate Coffee: Add the prepared coffee mixture to the egg mixture and whisk until fully combined.
- Add Dry Ingredients: Sift together the cake flour, cocoa powder, baking powder, and salt, then whisk these into the wet ingredients until evenly combined.
- Blend in Butter: Fold in the melted unsalted butter, whisking thoroughly until the batter is smooth and uniform.
