  • 2 tbsp heavy whipping cream
  • 2 tsp Kahlua coffee liqueur

Instructions

  1. Prepare Coffee Mixture: In a small bowl, dissolve the instant coffee in hot water and set aside.
  2. Mix Eggs and Sugar: In a large bowl, whisk the eggs and castor sugar for 3-4 minutes until the sugar is fully dissolved and the mixture is slightly frothy.
  3. Incorporate Coffee: Add the prepared coffee mixture to the egg mixture and whisk until fully combined.
  4. Add Dry Ingredients: Sift together the cake flour, cocoa powder, baking powder, and salt, then whisk these into the wet ingredients until evenly combined.
  5. Blend in Butter: Fold in the melted unsalted butter, whisking thoroughly until the batter is smooth and uniform.
  6. Chill the Batter: Cover the bowl with plastic wrap and refrigerate the batter for at least 1 hour or overnight to develop flavors and texture.
  7. Preheat Oven and Prepare Pan: Heat the oven to 370℉ (190℃). Grease a non-stick madeleine pan thoroughly with butter, and if not non-stick, dust lightly with flour.
