Ingredients

Scale

For the Crust:

  • 2 cups graham cracker crumbs
  • 120 grams unsalted butter, melted

For the Cheesecake Filling:

  • 680 grams full-fat cream cheese, softened
  • 200 grams granulated sugar
  • 240 milliliters heavy whipping cream
  • 225 grams dark chocolate (60–70% cocoa), melted
  • Zest and juice of 2 large oranges

For Garnish:

  • Orange slices
  • Dark chocolate shavings

Instructions

  1. Prepare the crust – Preheat the oven to 175°C (350°F). Mix graham cracker crumbs with melted unsalted butter until evenly combined. Press this mixture firmly into the base of a springform pan to form an even layer. Bake for 10 minutes, then set aside to cool completely.
  2. Prepare the cream cheese mixture – In a mixing bowl, beat the softened cream cheese until completely smooth and fluffy. Gradually add granulated sugar, blending until incorporated. Add the orange zest and juice, mixing thoroughly.
  3. Incorporate chocolate and cream – Melt the dark chocolate and allow it to cool slightly. Whip the heavy cream until soft peaks form. Fold the melted chocolate followed by the whipped cream gently into the cream cheese mixture until fully integrated.
  4. Assemble and chill – Pour the filling over the cooled crust in the springform pan, smoothing the top. Cover and refrigerate for at least 4 hours or overnight to allow the cheesecake to set thoroughly.
  5. Garnish and serve – Just before serving, top with fresh orange slices and dark chocolate shavings for an elegant finish.
