For the Bread:
- 3 cups grated zucchini (2 large or 3 small)
- 1 3/4 cups (260g) all-purpose flour
- 1/3 cup (40g) unsweetened cocoa powder, preferably Dutch processed
- 1.5 tsp baking soda (bi-carbonate)
- 1/2 tsp salt
- 2 tsp vanilla essence
- 1 1/4 cup (275g) white sugar
- 2 eggs
- 100g / 7 tbsp unsalted butter, melted
- 300g / 10 oz dark chocolate, coarsely chopped (keep some larger chunks!)
- Preheat oven: Preheat oven to 180C/350F (160C fan).
- Prepare pan: Grease and line a large loaf pan (28 x 15 x 6.5cm / 11 x 6 x 2.5 inches).
- Prepare zucchini: Squeeze out excess liquid from grated zucchini and drain in a colander.
- Mix dry ingredients: In a large bowl, whisk together flour, cocoa, baking soda, and salt.
- Mix wet ingredients: In a separate bowl, whisk eggs and sugar. Add melted butter and vanilla, whisk until combined.
- Combine batter: Pour wet mixture into dry ingredients and stir until just combined.
- Add zucchini and chocolate: Fold in drained zucchini and chopped chocolate until evenly distributed.
- Bake: Transfer batter to loaf pan and bake for 45 minutes. Cover with foil and bake an additional 20 minutes until a skewer comes out clean.
- Cool and serve: Let the bread cool in the pan for 15 minutes, then transfer to a rack to cool further before slicing.

- For extra moisture, ensure to drain the zucchini well.
