  • 2 to 3 tablespoons cinnamon sugar (3/4 teaspoon cinnamon for every 1 tablespoon of sugar)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and adjust the rack to the middle position. Prepare mini loaf pans by greasing and lining with parchment paper.
  2. Mix wet ingredients: In a medium bowl, whisk together egg, granulated sugar, brown sugar, pumpkin, oil, and vanilla until smooth.
