  • 375g bread flour
  • 100g pumpkin puree
  • 50g brown sugar
  • 10g salt
  • 2g pumpkin pie spice

  • Ground cinnamon

Instructions

  1. Prepare the Sourdough: 7-8 hours before starting the dough, feed your sourdough starter in a 1:1:1 ratio.
  2. Mix the Dough: Combine the levain, water, flour, pumpkin puree, brown sugar, salt, and pumpkin pie spice until smooth.
  3. Stretch and Folds: Perform 4 sets of stretch and folds over 2 hours.
  4. Shape the Dough: Stretch the dough, sprinkle with cinnamon, fold, and shape.
  5. Proof the Dough: Let the dough rise until doubled in size.
  6. Prep for Baking: Preheat the oven and dutch oven.
  7. Bake the Bread: Score the dough, bake with steam, then finish baking uncovered.
  8. Cool and Serve: Allow the bread to cool before slicing and serving.
