  • 1 cup reserved pasta water
  • For the Bacon:

  • 6 slices thick-cut bacon, chopped
  • For the Sauce:

  • 3 large eggs, room temperature
  • 1 cup freshly grated Parmesan cheese
  • 2 cloves garlic, minced (optional)
  • 1 teaspoon freshly cracked black pepper

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente. Reserve 1 cup of pasta water and then drain the pasta.
  2. Prepare the Bacon: Cook the chopped bacon until crispy. Set aside on a paper towel-lined plate. Leave some rendered bacon fat in the skillet.
  3. Whisk the Sauce: In a mixing bowl, whisk together eggs, Parmesan cheese, and black pepper.
  4. Combine Pasta and Bacon: Add drained pasta to the skillet with bacon fat. Toss to coat evenly.
  5. Make the Sauce: Turn off the heat and pour the egg mixture over the pasta. Stir vigorously, adding reserved pasta water gradually until desired consistency.
  6. Add Bacon and Serve: Stir in the crispy bacon pieces. Serve immediately, garnished with Parmesan and black pepper.
