Instructions

  1. Prepare Cocoa Mixture: In a small bowl, mix the cocoa powder and powdered sugar thoroughly. Using a strainer, sift half of this mixture onto a large dinner plate and set the remaining mixture aside for later use.
  2. Combine Sugars and Butter: In a medium non-stick skillet, combine the white granulated sugar, water, butter, and salt.
  3. Heat Sugar Mixture: Place the skillet over medium heat and cook while stirring occasionally until bubbles form around the edges, approximately 2 minutes.
  4. Add Almonds and Vanilla: Add the toasted almonds and vanilla extract to the skillet. Stir constantly and cook until the liquid evaporates and the sugar mixture clumps onto the almonds, about 4 to 5 minutes. Thin strings of sugar will form during this process.
  5. Coat Almonds with Cocoa: Transfer the coated almonds to the plate with sifted cocoa powder. Spread them evenly, then sift the remaining cocoa powder mixture over the top. Gently stir with a spoon to coat the almonds evenly and separate them. Allow to cool completely for at least 30 minutes.
  6. Remove Excess Cocoa: Once cooled, place the almonds in a large strainer and shake gently over the sink to remove any excess cocoa powder. They are now ready to enjoy or store in an airtight container.
