Salmon:
- 4 (4-6 ounce) salmon filets
- 2–3 tablespoons spicy curry powder
- kosher salt and black pepper
- chili flakes
- 1 tablespoon extra virgin olive oil
- 2 tablespoons honey
Coconut Curry Sauce:
- 6 tablespoons salted butter
- 1/4 cup Thai red curry paste
- 1 tablespoon fresh grated ginger
- 1 1/2 cups chopped broccoli
- 2 cups canned full-fat coconut milk
- 2 tablespoons tamari or soy sauce
- 1 tablespoon fish sauce
Garlic Butter Drizzle:
- 3–4 cloves garlic, chopped
- 5 tablespoons salted butter
- pinch of chili flakes
- Preheat the broiler. Place the salmon on a baking sheet and rub with olive oil, curry powder, salt, and pepper. Drizzle with honey and broil until crispy, about 3-5 minutes.
- In a skillet, melt 1 tablespoon butter, curry paste, and ginger. Add broccoli, coconut milk, tamari, and fish sauce. Simmer with salmon for 3-5 minutes.
- In another skillet, melt 5 tablespoons butter, garlic, and chili flakes until fragrant. Drizzle over cooked salmon.
- Serve the salmon and sauce over rice, garnished with basil or cilantro.
