Dry Ingredients:

  • 2½ cups all-purpose flour
  • 2 tbsp ground coffee (finely ground)
  • 1 tsp ground cinnamon

Wet Ingredients:

  • 1 cup salted butter (room temperature)
  • ½ cup dark brown sugar (packed)
  • 2 tsp pure vanilla extract

Additional:

  • Turbinado sugar (for topping, optional)

Instructions

  1. Whisk: In a medium bowl, whisk together flour, ground coffee, and cinnamon.
  2. Cream: In a large bowl or the bowl of a stand mixer, cream together butter and brown sugar until light and fluffy, about 3 minutes. Mix in vanilla.
  3. Shape: Gradually stir in flour and mix well. Turn out onto a lightly floured surface and knead a few times to bring the dough together. Pat into a flat rectangle about ⅓- to ½-inch thick.
  4. Cut: Use a sharp knife to cut dough into rectangles. Place on a baking sheet lined with parchment paper, spacing 1 inch apart, and prick with a fork. Sprinkle with turbinado sugar, if desired.
  5. Chill: Place the baking sheet in the freezer to chill for about 10 minutes while preheating the oven to 300°F.
  6. Bake: Bake in the preheated oven for 20 minutes or until the bottoms are lightly browned. Cool for 5 minutes before transferring to a wire rack.

Notes

  • You can adjust the amount of ground coffee to suit your preference for a stronger or milder coffee flavor.
  • For an extra indulgent treat, dip the cooled cookies in melted chocolate.
