Bacon:

  • 8 slices bacon

Vegetable Oil Mixture:

  • 2 tablespoons vegetable oil
  • 1 yellow onion, chopped
  • 2 garlic cloves, minced

Collard Greens:

  • 1 pound collard greens, cut into 2-inch chunks

Broth and Seasoning:

  • 4 cups chicken broth
  • 2 tablespoons brown sugar
  • 1 teaspoon kosher salt
  • 1 teaspoon coarse ground black pepper

Instructions

  1. Cook the Bacon: Add bacon to a dutch oven over medium heat, cook until crisp, then remove and chop.
  2. Prepare Aromatics: Remove half the bacon fat, add vegetable oil, onions, and garlic; cook until softened.
  3. Cook Collard Greens: Add collard greens to the pan, coat in oil and onions.
  4. Add Broth and Seasoning: Pour in chicken broth, brown sugar, salt, and pepper; cover and simmer for 90 minutes.
  5. Finish and Serve: Stir in bacon before serving.
