  • 1 cup (224 g) salted butter, softened
  • 1 cup (220 g) light brown sugar, packed
  • 1/4 cup (50 g) granulated white sugar
  • 2 egg yolks, at room temperature
  • 1 tbsp (15 ml) vanilla extract

Additional Ingredients:

  • 1 1/2 cups (120 g) old fashioned oats
  • 1 1/2 cups (60 g) cornflakes
  • Flaky sea salt for sprinkling

Instructions

  1. Preheat the oven: Preheat the oven to 350 degrees. Line two baking sheets with parchment paper and set aside.
  2. Prepare dry ingredients: In a medium bowl, whisk the flour, baking powder, baking soda, and salt together. Set aside.
  3. Cream butter and sugars: In a large bowl, cream the butter, brown sugar, and granulated white sugar together until light and fluffy.
  4. Add eggs and vanilla: Mix in the egg yolks and vanilla extract until pale and fluffy.
  5. Combine wet and dry: Add the dry ingredients to the wet ingredients and mix until combined.
  6. Stir in oats and cornflakes: Mix the oats and cornflakes into the dough.
  7. Scoop and bake: Scoop the dough onto baking sheets and bake for 10-12 minutes.
  8. Cool and shape: Let the cookies cool, then shape them with a cookie cutter and sprinkle with sea salt.
