These crack potatoes are the ultimate comfort food – creamy, cheesy, and loaded with bacon. Perfect for a family dinner or a potluck, these potatoes are sure to be a hit!

Potatoes:

  • 2 lbs Russet Potatoes (washed)

Other Ingredients:

  • 8 slices Bacon (cooked and chopped)
  • 3 Tbsp Butter (melted)
  • 1 packet Ranch Seasoning Mix (1 oz packet)
  • 1 cup Sour Cream
  • 2 cups Cheddar Cheese (shredded)
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1 green Onion (diced)

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Peel and dice the potatoes into approximately 1-inch pieces. Toss them with melted butter, salt, and pepper.

  3. Move the potatoes into an 8X8 baking pan. Cover with foil and bake for 40-50 minutes until tender.
  4. In a separate bowl, mix sour cream, ranch seasoning, half of the bacon, and half of the cheddar cheese.
  5. Pour this mixture over the cooked potatoes. Gently stir to coat.

  6. Sprinkle the remaining cheddar cheese and bacon on top.
  7. Bake for 5-7 minutes until the cheese is melted.
  8. Top with green onions and serve warm.

Notes

  • Feel free to add extra toppings like chopped chives or jalapenos for added flavor.
