  • 1 tsp baking soda
  • 1 1/2 cups granulated white sugar
  • 2 large eggs
  • 1 stick (8 Tbsp) unsalted butter, melted
  • 4 Tbsp extra light olive oil
  • 1/2 tsp vanilla extract
  • 2 cups all-purpose unbleached flour
  • 1 tsp clementine or orange zest
  • 1/2 cup dried cranberries (craisins)
  • 1/2 cup dried apricots

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F. Butter and flour a bread loaf pan.
  2. Prepare Kefir Mixture: In a medium bowl, whisk together 1 1/2 cups kefir and 1 tsp baking soda. Let it sit for 20 minutes.
  3. Prepare Fruits: Chop dried apricots and cover both apricots and craisins with boiling water for 2 minutes. Drain well.
  4. Mix Wet Ingredients: In a large bowl, beat eggs and sugar until pale. Add melted butter, olive oil, and vanilla. Stir to combine.
  5. Combine Ingredients: Whisk in the kefir mixture, then mix in flour until well blended.
  6. Add Fruits: Fold in craisins, apricots, and zest.
  7. Bake: Transfer batter to the prepared pan and bake for 60-70 minutes at 350°F. Check for doneness with a toothpick.
  8. Cool and Serve: Let the loaf cool in the pan, then transfer to a wire rack. Dust with powdered sugar before serving.
