Ingredients

Scale

Chicken and Seasoning

  • 3 chicken breasts (about 650g)
  • 1⅓ tablespoon Cajun seasoning, divided
  • Salt, to taste
  • Black pepper, to taste

Sauce and Coating

  • 1 cup single cream (half and half cream)
  • ⅓ cup chicken broth or chicken stock
  • 40 g unsalted butter
  • ⅓ cup finely chopped onion
  • 3 large garlic cloves, minced
  • 3 tablespoons all-purpose flour

Instructions

  1. Prep the Chicken: Cut the chicken breasts lengthwise into thin cutlets and pat them dry thoroughly with a kitchen paper towel. Finely chop the onions and garlic and set them aside.
  2. Season the Chicken: Season both sides of the chicken cutlets with salt, black pepper, and Cajun seasoning, reserving about 1 teaspoon of the seasoning mixture for later use.
  3. Prepare Flour Coating: In a bowl, combine the all-purpose flour with a pinch of the reserved Cajun seasoning and mix well to integrate the spices evenly into the flour.
  4. Coat the Chicken: Working with one cutlet at a time, dredge the seasoned chicken in the flour mixture, ensuring it is evenly coated. Shake off any excess flour and repeat with remaining chicken cutlets.
  5. Cook the Chicken: Heat a skillet over medium-high heat and melt the unsalted butter until hot. Carefully place the coated chicken cutlets into the skillet and cook for 3 minutes on each side or until they develop a golden-brown crust. Remove the chicken from the pan and set aside.
  6. Sauté Aromatics: To the same pan, add the finely chopped onions and minced garlic. Sauté for about 1 to 2 minutes, stirring constantly to prevent burning, until fragrant and translucent.
  7. Deglaze the Pan: Pour in the chicken broth and stir to combine, scraping up any browned bits from the bottom of the pan to enhance the sauce’s flavor.
  8. Add Cream and Seasoning: Pour the single cream into the pan and add the remaining Cajun seasoning. Stir well to combine all ingredients, reduce the heat to medium-low, and let the sauce simmer gently for 1 minute. Taste and adjust seasoning as needed with salt and pepper.
  9. Simmer Chicken in Sauce: Return the cooked chicken cutlets to the skillet, spoon some sauce over them, and continue to simmer for 3 to 5 minutes, or until the chicken is cooked through and tender.
  10. Serve and Enjoy: Remove from heat and serve the creamy Cajun chicken with your choice of mashed potatoes, rice, or over pasta. Spoon extra sauce over the chicken for maximum flavor and enjoy your meal!

Notes

  • For a spicier dish, increase the amount of Cajun seasoning or add a pinch of cayenne pepper.
  • Adjust the consistency of the sauce by adding more chicken broth if it becomes too thick.
  • This dish pairs wonderfully with creamy mashed potatoes, steamed rice, or buttered pasta.
  • Make sure to not overcrowd the pan when cooking the chicken to ensure a crispy coating.
  • Use fresh garlic and onions for best flavor development in the sauce.
