Sauce

  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 1 tbsp Italian seasoning
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach, roughly chopped
  • 1 cup grated parmesan cheese

Garnish

  • Fresh basil or parsley, for garnish (optional)

Instructions

  1. Cook the pasta: In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Drain the pasta, reserving one cup of pasta water, and set both aside.
  2. Sauté the shrimp: Heat 1 tablespoon of olive oil in a skillet over medium heat. Season the shrimp with salt and pepper, then cook for 2 to 3 minutes per side until they turn pink and opaque. Remove shrimp from the skillet and set aside.
  3. Prepare the sauce: In the same skillet, add the remaining tablespoon of olive oil. Sauté the minced garlic for about 1 minute until fragrant. Pour in the chicken broth, heavy cream, and sprinkle the Italian seasoning. Let the sauce simmer gently for 3 to 5 minutes until it thickens slightly.
  4. Add the vegetables and cheese: Stir in the chopped spinach and sun-dried tomatoes. Allow them to soften and combine with the sauce for 2 minutes. Then add the grated parmesan cheese, stirring until it melts fully into the creamy sauce.
  5. Combine pasta and shrimp: Add the cooked linguine to the skillet and toss well to coat in the sauce. If the sauce is too thick, add some of the reserved pasta water to loosen it. Gently fold in the cooked shrimp and allow everything to warm through for another 2 minutes.
  6. Serve and garnish: Plate the creamy Tuscan shrimp linguine immediately and garnish with fresh basil or parsley if desired. Serve hot for best flavor.
