For the Chicken:

  • 1/2 cup Panko breadcrumbs for Super Easy method or 1 cup for Quick Dredge method
  • Oil spray
  • 2 small chicken breasts (around 6-7oz/180-210g each)
  • Salt and pepper
  • 4 slices Swiss cheese
  • 4 to 6 slices of ham (about 2.5oz/75g)
  • 3 tbsp mayonnaise
  • 1 1/2 tbsp Dijon mustard
  • 1 egg
  • 2 tsp plain flour

For the Dijon Cream Sauce:

  • 1 1/2 tbsp butter
  • 1 1/2 tbsp flour
  • 1 1/4 cups milk
  • 2 tbsp Dijon mustard
  • 3 tbsp Parmesan cheese, finely grated

Instructions

  1. Preheat the oven: Preheat the oven to 200C/390F (standard) or 180C/350F (fan).
  2. Prepare breadcrumbs: Spread Panko breadcrumbs on a baking tray, spray with oil, and bake for 3 minutes or until light golden. Remove and place in a bowl.
  3. Prepare chicken: Cut a pocket into each chicken breast. Fill each pocket with Swiss cheese and ham, then seal with toothpicks. Season with salt and pepper.
  4. For Super Easy Method: Mix mayonnaise, mustard, salt, and pepper. Spread onto the chicken and coat with breadcrumbs. Bake.
  5. For Quick Dredge Method: Dip chicken in egg mixture and then breadcrumbs. Bake until golden.
  6. Bake: Bake the chicken for 25-30 minutes until golden brown and cooked through.
  7. Make Dijon Cream Sauce: Melt butter, add flour, then gradually whisk in milk, mustard, and Parmesan. Cook until thickened.
  8. Serve: Remove toothpicks from chicken, serve with Dijon Cream Sauce.
