For the Chicken:
- 1/2 cup Panko breadcrumbs for Super Easy method or 1 cup for Quick Dredge method
- Oil spray
- 2 small chicken breasts (around 6-7oz/180-210g each)
- Salt and pepper
- 4 slices Swiss cheese
- 4 to 6 slices of ham (about 2.5oz/75g)
- 3 tbsp mayonnaise
- 1 1/2 tbsp Dijon mustard
- 1 egg
- 2 tsp plain flour
For the Dijon Cream Sauce:
- 1 1/2 tbsp butter
- 1 1/2 tbsp flour
- 1 1/4 cups milk
- 2 tbsp Dijon mustard
- 3 tbsp Parmesan cheese, finely grated
- Preheat the oven: Preheat the oven to 200C/390F (standard) or 180C/350F (fan).
- Prepare breadcrumbs: Spread Panko breadcrumbs on a baking tray, spray with oil, and bake for 3 minutes or until light golden. Remove and place in a bowl.
- Prepare chicken: Cut a pocket into each chicken breast. Fill each pocket with Swiss cheese and ham, then seal with toothpicks. Season with salt and pepper.
- For Super Easy Method: Mix mayonnaise, mustard, salt, and pepper. Spread onto the chicken and coat with breadcrumbs. Bake.
- For Quick Dredge Method: Dip chicken in egg mixture and then breadcrumbs. Bake until golden.
- Bake: Bake the chicken for 25-30 minutes until golden brown and cooked through.
- Make Dijon Cream Sauce: Melt butter, add flour, then gradually whisk in milk, mustard, and Parmesan. Cook until thickened.
- Serve: Remove toothpicks from chicken, serve with Dijon Cream Sauce.
