Instructions

  1. Prep the Ingredients: Slice the chicken breasts, red, yellow, and green bell peppers, and onion into thin, even strips to ensure quick and uniform cooking.
  2. Season the Chicken: In a bowl, combine the sliced chicken with chili powder, smoked paprika, cumin, oregano, minced garlic, salt, black pepper, and 1 tablespoon of olive oil. Toss well to evenly coat the chicken in the seasoning mixture.
  3. Cook the Chicken: Heat a skillet over medium-high heat and add the remaining 1 tablespoon of olive oil. Add the seasoned chicken strips and sear them until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  4. Sauté Vegetables: In the same skillet, add the sliced bell peppers and onions. Sauté them until they become softened but still retain some crispness, about 5-6 minutes.
  5. Combine and Finish: Return the cooked chicken to the skillet with the vegetables. Squeeze the juice of one lime over the mixture and toss everything to combine and heat through for an additional 1-2 minutes.
