Marinade
- 3 chicken breasts, cut into bite-sized chunks
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp turmeric
- Pinch of salt
Sauce Base
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 tbsp ginger, chopped
- 1 chilli, chopped (keep seeds if you like it hot)
- 400g can chopped tomatoes
- 1 tbsp ground coriander
- 1 tbsp ground cumin
- 2 tsp turmeric
- 1 tbsp vegetable oil
- 300ml water
- Pinch of salt (to taste)
For Cooking Chicken
- 1 small onion, sliced
- 2 chillies, chopped
- 1 tbsp garam masala
- 1 tbsp vegetable oil
- Handful chopped fresh coriander (for garnish)
- Marinate the chicken: Combine the chicken breast chunks with 1 tsp cumin, 1 tsp coriander, 1 tsp turmeric, and a pinch of salt in a bowl. Mix well to coat the chicken evenly. Cover and refrigerate for at least a few hours, ideally overnight, to allow flavors to infuse.
- Prepare the onion mixture: Heat some vegetable oil in a pan and fry the chopped onion for 2 minutes. Add the crushed garlic, chopped ginger, and one chopped chilli. Continue frying gently for 5 minutes, stirring frequently, until the onion turns golden.
- Simmer the onion mix: Add 300ml of water to the onion mixture and let it simmer for 40 minutes to develop a deep flavor.
- Blend chopped tomatoes: Use a blender to puree the canned chopped tomatoes until smooth, setting aside for later use.
- Cook the tomato spice base: In a large pan, heat 1 tbsp vegetable oil and fry 1 tbsp ground coriander, 1 tbsp ground cumin, and 2 tsp turmeric for 1 minute to release their aromas. Pour in the blended tomatoes and simmer on low heat for 10 minutes.
- Combine sauces: Blend the onion and water mixture into a smooth sauce. Add this to the tomato mixture and simmer gently for another 20 minutes. Season with a pinch of salt and adjust seasoning to taste.
- Cook the chicken: In a separate pan, heat 1 tbsp vegetable oil and fry the marinated chicken pieces until almost cooked through. Add the sliced onion and 2 chopped chillies, frying for about 5 minutes until the onions are soft.
- Combine chicken and sauce: Pour the prepared sauce over the chicken and simmer over low heat for 20 minutes to fully cook the chicken and blend the flavors.
- Garnish and serve: Sprinkle chopped fresh coriander over the dish and serve immediately with steamed rice for a complete meal.
