Soup Base

  • 2 tablespoons tomato paste
  • 25 ounces tomato basil pasta sauce
  • 28 ounces diced canned tomatoes
  • 4 cups chicken broth (plus extra 12 cups if desired)
  • 2 teaspoons kosher salt, divided (or more to taste)

Noodles

  • 12 lasagna noodles, uncooked and broken into 2-inch pieces

Cheese & Garnish

  • ½ cup heavy cream (optional)
  • 1 cup shredded mozzarella cheese
  • ½ cup freshly grated parmesan cheese
  • ½ cup ricotta cheese
  • 6 tablespoons fresh basil, finely chopped

Instructions

  1. Sauté Aromatics and Beef: Heat the olive oil in a large pot or Dutch oven over medium heat. Add the finely diced onion and cook until softened, about 3-5 minutes. Add the ground beef and cook until browned on all sides, breaking it up as it cooks.
  2. Add Seasonings and Tomato Paste: Stir in the minced garlic, red pepper flakes, 1 teaspoon kosher salt, dried oregano, and tomato paste. Cook for 1-2 minutes until fragrant, allowing the tomato paste to deepen in color and flavor.
  3. Add Tomato Sauces and Broth: Pour in the tomato basil pasta sauce, diced canned tomatoes (including juice), and 4 cups of chicken broth. Bring the mixture to a boil over medium-high heat.
  4. Cook Noodles and Simmer: Once boiling, add the broken lasagna noodles and the remaining 1 teaspoon of kosher salt (or adjust to taste). Reduce heat to a simmer and cook until the noodles are tender, about 12-15 minutes. Stir occasionally to prevent noodles from sticking.
  5. Make It Creamy: Stir in the optional heavy cream to add richness. If desired, add extra chicken broth (1-2 cups) at this point to achieve a thinner soup consistency. For extra creaminess, you can also stir some shredded mozzarella or parmesan cheese directly into the soup now.
  6. Serve and Garnish: Ladle the hot soup into bowls and top with spoonfuls of ricotta cheese, shredded mozzarella, parmesan cheese, and freshly chopped basil. Serve immediately and enjoy the warm, cheesy flavors.
