For Macarons:

  • 165 grams almond flour (1 1/3 cups)
  • 165 grams powdered sugar (1 cup)
  • 115 grams egg whites (3 Large eggs)
  • 150 grams granulated sugar (2/3 cup)

For Chocolate Ganache:

  • 100 grams bitter-sweet chocolate chips (1/2 cup)
  • 100 grams heavy whipping cream (1/2 cup)

Instructions

  1. Toast almond flour: Preheat oven to 350°F and toast almond flour for 5 minutes. Allow to cool.
  2. Sift dry ingredients: Combine powdered sugar and almond flour, sifting together. Set aside.
  3. Whip egg whites: In a clean bowl, beat egg whites until foamy. Gradually add granulated sugar, then beat on high for 4 minutes until stiff peaks form.
  4. Combine dry and wet ingredients: Gently fold almond flour mixture into the egg whites until fully incorporated. Optionally add food coloring gel.
  5. Pipe and rest: Transfer batter to a piping bag, pipe onto a baking sheet, tap the pan to release air bubbles, and let the macarons rest for 15 minutes until a skin forms.
  6. Bake: Bake at 350°F for 9 minutes. Cool completely on the pan.
  7. Make Chocolate Ganache: Heat heavy cream until boiling, then pour over chocolate chips. Let sit for a minute, then stir and chill until set.
  8. Fill and assemble: Beat the chilled ganache until soft peaks form. Use to fill macarons and sandwich them together.
