Ingredients

Scale

Main Ingredients

  • 2 cups sweet corn (fresh, canned, or frozen)
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 (8 oz) block cream cheese, softened
  • 2 cups shredded cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • Salt and black pepper to taste

Additional Mix-ins

  • ½ cup chopped green onions
  • ½ cup diced red bell pepper
  • 1 jalapeño, finely chopped (remove seeds for less heat)
  • ¼ cup chopped fresh cilantro (optional)

Instructions

  1. Prepare the Corn: If using fresh corn, cut the kernels off the cob carefully. For canned corn, drain and rinse thoroughly to remove excess sodium. If using frozen corn, thaw completely and drain off any excess moisture to prevent sogginess in the dip.
  2. Mix Cream Base: In a large mixing bowl, combine the sour cream, mayonnaise, and softened cream cheese. Use a hand mixer or whisk to blend until the mixture is smooth and creamy with no lumps, ensuring a perfect base for the dip.
  3. Add Cheeses and Spices: Stir in the shredded cheddar and pepper jack cheeses evenly. Next, add garlic powder, onion powder, smoked paprika, chili powder, and salt and black pepper to taste. Mix well to evenly distribute the seasoning throughout the creamy mixture.
  4. Incorporate Vegetables: Fold in the prepared corn kernels, chopped green onions, diced red bell pepper, and finely chopped jalapeño. If desired, add chopped fresh cilantro for a fresh herbal note. Gently mix until all ingredients are well combined.
  5. Serve Cold or Hot: For a cold dip, cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld. Garnish with additional green onions, cheese, or cilantro before serving. For a hot dip, preheat the oven to 375°F (190°C). Transfer the mixture into a baking dish, top with extra shredded cheese, and bake for 20 to 25 minutes until bubbly and golden. Optionally garnish with crumbled bacon and fresh cilantro before serving.

Notes

  • Mexican Street Corn Dip: Swap mayo for Mexican crema, add crumbled cotija cheese, and sprinkle Tajín for a tangy, authentic elote-inspired dip.
  • Spicy Kick: Increase heat by adding diced jalapeños, your favorite hot sauce, or a pinch of cayenne pepper to suit your spice preference.
