Ingredients

Scale

Marinade and Main Ingredients

  • ¼ cup Taco Seasoning
  • 1 tablespoon extra-virgin olive oil
  • 2 tablespoons fresh lime juice (from 1 lime)
  • 2 pounds boneless skinless chicken breasts, cut into thin strips

Vegetables

  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced

For Serving

  • 12 (6-inch) flour tortillas, warmed
  • Sliced avocado
  • Fresh cilantro leaves
  • Salsa or hot sauce
  • Sour cream

Instructions

  1. Marinate the chicken and veggies: In a large zip-top bag, combine the taco seasoning, olive oil, and lime juice. Add the chicken strips and sliced bell peppers. Toss everything together until well coated with the marinade.
  2. Freeze the marinated mix: Seal the bag tightly, pressing out as much air as possible to prevent freezer burn. Label and date the bag, then place it in the freezer where it can be stored for up to 3 months.
  3. Thaw the fajita mix: When ready to cook, transfer the bag from the freezer to the refrigerator and let it thaw for at least 8 hours or overnight, allowing the flavors to meld further.
  4. Preheat the oven: Set your oven to 400°F (200°C) and position a rack in the center to ensure even cooking.
  5. Bake the chicken and peppers: Spread the thawed fajita mix evenly on a rimmed baking sheet in a single layer. Bake for approximately 15 minutes until the chicken is cooked through and the vegetables are tender.
  6. Char the veggies (optional): For a slight char and deeper flavor, switch the oven to the broiler setting on HIGH and cook the fajita mix for an additional 3 to 5 minutes, watching carefully to avoid burning.
  7. Serve family-style: Warm the tortillas and serve the baked chicken and peppers alongside sliced avocado, fresh cilantro leaves, salsa or hot sauce, and sour cream, allowing everyone to build their own fajitas.

Notes

  • Use fresh lime juice for the best flavor in the marinade.
  • Feel free to substitute flour tortillas with corn tortillas for a gluten-free option (note this changes the overall diet classification).
  • To make the dish spicier, add sliced jalapeños or hot sauce to the marinade or as a topping.
  • Labeling the freezer bag with the date helps ensure you use the mix within the recommended 3 months.
  • Make sure to thaw the fajita mix completely in the fridge for safety and even cooking.
  • Extra fajita mix can be doubled and portioned into multiple bags for quick meals throughout the month.
