Sausage Filling
- 3 tbsp avocado oil
- 1 large white sweet potato, diced (substitute orange sweet potato if preferred)
- 3/4 tsp sea salt (divided)
- 1 tsp garlic powder
- 1/4 tsp black pepper (omit for AIP)
- 1 tbsp fresh cilantro, chopped
- 12 oz ground pork sausage (for AIP, use ground pork with AIP sausage seasoning)
- 8 oz mushrooms, sliced
- 4 strips of bacon, cooked and chopped
Spices for AIP Sausage Seasoning
- 1/2 tsp sea salt
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp dried thyme
Other
- 4 Siete Foods burrito tortillas (or tortilla of choice)
- Chimichurri sauce to serve
- Cook Sweet Potatoes: Heat avocado oil in a large skillet over medium heat. Add diced sweet potatoes and season lightly with salt, black pepper (omit for AIP), and garlic powder. Cook for 8-10 minutes, stirring occasionally, until sweet potatoes are crisp and tender. Remove from heat and sprinkle with chopped cilantro; set aside.
- Cook Sausage: In the same skillet or a new one, add ground pork sausage. Cook over medium heat, breaking it apart with a wooden spoon until browned and fully cooked. Remove from heat and set aside.
- Sauté Mushrooms: Add sliced mushrooms to the skillet, sprinkle lightly with salt, and cook for 4-5 minutes until softened. Remove from heat and set aside.
- Warm Tortillas: Lightly heat the burrito tortillas according to package instructions to make them pliable and easier to fold.
- Assemble Burritos: On each warmed tortilla, add approximately one-quarter of the sweet potato, about 1/4 to 1/3 cup of cooked sausage, 8-10 sliced mushrooms, and the chopped bacon equivalent to one strip. Avoid overfilling. Fold the bottom edge of the tortilla about a third of the way up, fold in the two side corners, then roll tightly to form a burrito. Optionally, add 1-2 tbsp avocado oil to a pan and crisp the burrito on all sides for a few minutes.
- Serve: Slice the burritos in half and serve with chimichurri sauce on the side for added flavor.
- Freeze for Later: Allow burritos to cool completely at room temperature. Wrap individually and store in a freezer-safe bag. Freeze for up to 1 month. Reheat thoroughly before serving.

- For AIP compliance, omit black pepper and use the specified AIP sausage seasoning instead of prepared sausage.
