For the Caramelized Onions:

  • 2 large onions (thinly sliced)
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 cloves garlic (minced)

For the Meatloaf:

  • 2 lbs ground beef
  • 2 eggs
  • 1/2 cup breadcrumbs
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • Salt and pepper (to taste)
  • 1/2 cup Gruyère cheese (grated)

For the Onion Sauce:

  • 1 cup beef broth

Instructions

  1. Caramelize the Onions: Heat olive oil and butter in a skillet over medium heat. Add onions, cook for 20-25 minutes until caramelized. Stir in garlic, cook for 1-2 minutes. Set aside.
  2. Prepare the Meatloaf: Mix ground beef, eggs, breadcrumbs, Worcestershire sauce, thyme, salt, pepper. Add half of the caramelized onions. Shape into a loaf and place in a baking dish.
  3. Bake: Preheat oven to 350°F (175°C). Bake the meatloaf for 45-50 minutes until internal temperature reaches 160°F (71°C).
  4. Make the Onion Sauce: In a skillet, combine remaining caramelized onions and beef broth. Simmer to thicken.
  5. Finish the Meatloaf: Top the meatloaf with Gruyère cheese. Broil for 3-5 minutes until golden and bubbly.
  6. Serve: Let the meatloaf rest, then slice and serve with the onion sauce.
