Ingredients

Scale

Dough

  • ½ cup warm water (about 110°F)
  • ½ cup whole milk (room temperature)
  • 2 ¼ teaspoons dry active yeast
  • ¼ cup + 1 tablespoon granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 teaspoon kosher salt
  • 4 cups all-purpose flour
  • 5 tablespoons unsalted butter (room temperature)
  • ½ cup confetti sprinkles

Cinnamon Sugar Filling

  • ⅓ cup unsalted butter (softened)
  • ⅓ cup granulated sugar
  • ⅓ cup dark brown sugar (packed)
  • 1 tablespoon ground cinnamon
  • Pinch kosher salt

Cream Cheese Frosting

  • 4 oz cream cheese
  • ¼ cup unsalted butter (room temperature)
  • 1 ½ cup powdered sugar
  • Pinch kosher salt
  • Additional confetti sprinkles (to garnish)

Instructions

  1. Activate Yeast: Sprinkle the dry active yeast over the warm water and milk mixture, add 1 tablespoon of sugar, and stir to combine. Let this sit for 5-7 minutes until it bubbles and activates, indicating the yeast is ready to use.
  2. Mix Dough: In a stand mixer bowl, combine the activated yeast mixture, remaining granulated sugar, egg, and egg yolk. In a separate bowl, whisk salt into the flour. Add 2 cups of flour to the wet ingredients and mix using the dough hook attachment on low speed. Gradually add an additional cup of flour and continue kneading, adding softened butter one tablespoon at a time. Finally, add the remaining cup of flour and knead until the dough is smooth and pulls away from the bowl’s sides. Incorporate the confetti sprinkles evenly throughout the dough.
  3. First Rise: Transfer the dough to a lightly greased bowl and cover it with plastic wrap. Let the dough rest at room temperature for about an hour, or until it has doubled in size.
  4. Shape Dough: Punch down the risen dough to release air. On a lightly floured surface, roll the dough out into a 20 x 14-inch rectangle. Spread ⅓ cup of softened butter evenly over the rolled dough.
  5. Add Cinnamon Filling: In a bowl, mix granulated sugar, dark brown sugar, cinnamon, and a pinch of kosher salt. Sprinkle this cinnamon sugar mixture evenly over the buttered dough, gently pressing it in.
  6. Form Rolls: Starting from the long edge, roll the dough tightly into a log. Cut the log into 12 equal slices. Arrange the slices in a greased 9 x 12-inch baking pan, cover with plastic wrap, and let them rise for 30-45 minutes until puffed up.
  7. Bake Rolls: Preheat the oven to 350°F (175°C). Remove the plastic wrap and bake the rolls for 30-35 minutes, until golden brown on top and the internal temperature reaches 185°F. Allow the rolls to rest for 5 minutes to cool slightly.
  8. Make Frosting & Serve: Beat cream cheese and butter together until smooth. Gradually add sifted powdered sugar along with a pinch of salt, beating until the frosting is thick and creamy. Spread the frosting over warm cinnamon rolls and garnish with additional confetti sprinkles. Serve warm and enjoy!

Notes

  • Use room temperature ingredients to help dough rise evenly.
  • If dough is sticky, dust with a little flour when rolling out.
  • For best results, serve rolls warm with frosting melted slightly.
  • Confetti sprinkles add a fun colorful touch but do not affect taste.
  • Can be stored in an airtight container for up to 2 days; warm before serving.
